  • 6 cups unsweetened almond beverage
  • 1 cup glutinous rice
  • 3 tablespoons organic cane sugar
  • A dash of sea salt
  • 1/2 tablespoon vanilla extract
  • 1 teaspoon rose essence
  • 1/4 cup chopped dried apricots
  • Pomegranate seeds for garnish
  • Chopped pistachios for garnish

Method
 

Step 1: Prepare the Rice
  1. Start by rinsing the glutinous rice under cold water. This removes excess starch. It’s a simple step, but it makes a noticeable difference in texture. After rinsing, drain the rice well.
Step 2: Combine Ingredients
  1. In a large pot, pour 6 cups of the unsweetened almond beverage. Add the rinsed rice, organic cane sugar, a dash of sea salt, vanilla extract, and rose essence. Stir the mixture to combine everything nicely.
Step 3: Cook the Mixture
  1. Place the pot on the stove over medium heat. Bring the mixture to a gentle simmer. Stir frequently to prevent the rice from sticking to the bottom. This constant stirring helps to create that creamy pudding texture.
Step 4: Simmer Until Done
  1. Once simmering, reduce the heat to low. Let the rice cook for about 30-35 minutes, stirring occasionally. You’ll notice the rice absorbing the almond milk. You want the rice to be tender and the pudding to thicken up. If it seems too thick, add a splash more almond milk to reach your desired consistency.
Step 5: Stir in Dried Apricots
  1. Once the rice is cooked through and the pudding has thickened, remove the pot from heat. Carefully fold in the chopped dried apricots. Their sweetness infuses the pudding even more.
Step 6: Cool and Serve
  1. Let the pudding cool slightly. Serve warm, or place it in the refrigerator to chill. It can be enjoyed at room temperature too, so no pressure! When ready to serve, garnish with pomegranate seeds, chopped pistachios, shredded coconut, and a sprinkle of ground cinnamon.
