Ingredients

  • - 4 bone-in pork chops
  • - 1 ½ cups long-grain rice
  • - ½ cup chopped yellow onion
  • - ½ cup chopped celery
  • - 3 ½ cups beef stock
  • - 2 tablespoons vegetable oil
  • - 3 tablespoons salted butter
  • - 2 tablespoons Worcestershire sauce optional
  • - 1 teaspoon dried thyme
  • - Salt, pepper, and garlic powder, to taste
  • Feel free to add a few sprigs of fresh parsley for extra color and flavor!

Method

Step 1: Preheat That Oven
  1. Start by preheating your oven to 425°F (220°C). This means the moment you’re ready to pop your dish inside, it’ll be all set for perfect cooking.
Step 2: Prep the Baking Dish
  1. Grab a reliable 9x13-inch baking dish and give it a light spray with nonstick cooking spray. This ensures that your rice and pork won’t stick and makes cleanup a breeze.
Step 3: Sauté Your Base
  1. In a large skillet over medium-high heat, toss in your salted butter. Once it begins to melt and bubble, add the rice, followed by chopped onions and celery. Stir this mixture frequently, watching for that lovely golden hue on the rice while the onions and celery soften. We're aiming for a lovely fragrance that says, “Dinner is on the way!”
Step 4: Ready the Baking Dish
  1. Once the rice has achieved that light browning, transfer the mixture directly into your prepared baking dish. Spread it out evenly so everything cooks beautifully.
Step 5: Add the Beef Stock
  1. Next, pour 3 ½ cups of beef stock over the rice in the dish. This will infuse all those delicious flavors. If you’re feeling adventurous, add in the Worcestershire sauce now for an extra kick.
Step 6: Heat the Skillet Again
  1. Using the same skillet, heat up the vegetable oil over high heat—don’t skip this step! We want that pan smoking hot. It’s time to brown those pork chops.
Step 7: Season the Chops
  1. Season both sides of your bone-in pork chops generously with salt, pepper, garlic powder, and dried thyme. You want each bite to burst with flavor.
Step 8: Sear the Pork Chops
  1. Add the pork chops to the hot skillet, working in batches if necessary. Sear them for about two minutes on each side. You’re not cooking them through yet; just build that beautiful brown crust.
Step 9: Lay the Chops On the Rice
  1. Once the pork chops are nicely browned, place them on top of the rice in your baking dish. Make sure they are nestled snugly; they’ll cook to perfection while everything bakes together.
Step 10: Cover and Bake
  1. Cover the dish tightly with aluminum foil. This helps trap all that flavor. Place it in your preheated oven and bake for about 35-40 minutes. The rice should be tender and absorb all that liquid by the end, while the pork chops need to reach an internal temperature of 145°F (63°C).

Notes

- Use Bone-In Chops: They add great flavor and moisture. If you can’t find bone-in at the store, pork loin chops can work too.
- Choose Quality Stock: Use high-quality beef stock for the best flavor. Homemade or store-bought, it makes a difference!
- Don’t Skip Browning: That initial sear is crucial for flavor, so don’t rush this step.
- Customize: Feel free to toss in other veggies like bell peppers or peas for added color and taste.
- Make it Ahead: You can prep the dish up to a day in advance and store it in the fridge to save time on busy nights.
