Ingredients

  • To create mouth-watering banh mi burgers, gather the following ingredients:
  • - 1 pound ground pork
  • - ¼ cup fresh basil, finely chopped
  • - 4 cloves garlic, minced
  • - 3 green onions, chopped white and green parts
  • - 1 tablespoon fish sauce
  • - 1-2 teaspoons sriracha adjust to your spice preference
  • - 1 tablespoon sugar
  • - 2 teaspoons cornstarch
  • - 1 teaspoon freshly cracked black pepper
  • - 1 teaspoon kosher salt
  • - Sriracha Mayo:
  • - ½ cup mayonnaise
  • - 2 green onions, chopped white and green parts
  • - 2 teaspoons sriracha and more if you want extra kick
  • - Banh Mi Burger:
  • - 2 teaspoons toasted sesame oil optional
  • - 4 toasted brioche buns
  • - ½ cup quick-pickled vegetables, drained
  • - ¼ cup chopped cilantro
  • - 1 jalapeño, thinly sliced optional
  • - 2 Persian cucumbers, sliced

Method

Step 1: Prepare the Pork Mixture
  1. In a large mixing bowl, combine the ground pork, chopped basil, minced garlic, and diced green onions. Next, add the fish sauce, sriracha, sugar, cornstarch, black pepper, and kosher salt. Use your hands to mix the ingredients until well combined, but don't overwork the mixture. You want to keep that juiciness intact!
Step 2: Form the Patties
  1. With your hands, carefully shape the pork mixture into four even patties, each about ⅓-inch thick. Ensure they are uniform to cook evenly. Place them on a plate while you prepare the next steps.
Step 3: Make the Sriracha Mayo
  1. While the patties are resting, grab a small bowl and whisk together the mayonnaise, chopped green onions, and sriracha until smooth. Make sure it’s well blended; this zesty sauce will be a star player in your burger!
Step 4: Cook the Patties
  1. Heat the toasted sesame oil in a large cast-iron skillet over medium heat. When the oil begins to shimmer, carefully add the pork patties. Cook them undisturbed for about 5 minutes until they're golden brown. Flip the patties and continue cooking until they reach an internal temperature of 160°F, about another 5 minutes. Use an instant-read thermometer for accuracy.
Step 5: Toast the Buns
  1. While the patties are cooking, you can toast the brioche buns on a separate skillet or grill until golden brown. A bit of fresh flavor is always a welcome addition to your meal!
Step 6: Assemble the Ban Mi Burgers
  1. Spread about 1 tablespoon of the sriracha mayo on the inside of each toasted bun (both top and bottom). Layer the bottom buns with the quick-pickled vegetables, chopped cilantro, and jalapeño slices (if you're feeling spicy). Place the cooked pork patty on top, and finish with the fresh cucumber slices. Cap it off with the top bun, mayo side down.
Step 7: Repeat and Serve
  1. Repeat this assembly process with the remaining ingredients. Serve the banh mi burgers warm, garnished with extra pickled veggies or sriracha if desired.

Notes

- Mix the pork mixture ahead of time: If you're short on time, you can prepare the pork mixture the night before and let it sit in the fridge to let the flavors meld.
- Experiment with spices: Feel free to tweak the spice level with more or less sriracha or even add a dash of chili powder for an extra kick.
- Toast those buns: A good toast can add a satisfying crunch and keep the bun from getting soggy.
- Customize the toppings: If you’re not keen on spicy, leave out the jalapeños or slice carrots for crunch instead.
- Use a meat thermometer: This will ensure your patties are perfectly cooked without guesswork.
