Ingredients

  • 4 large eggs, beaten
  • 2 cups half-and-half
  • 1 teaspoon sea salt
  • 1 teaspoon freshly cracked black pepper
  • 1 tablespoon Dijon mustard
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups diced yellow onions
  • 1 cup finely chopped celery
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme, chopped
  • 1 teaspoon dried sage or 1 tablespoon fresh sage, chopped
  • 1 teaspoon dried rosemary or 1 tablespoon fresh rosemary, chopped
  • 2 tablespoons white wine vinegar
  • 6 cups of soft sandwich bread, cut into 3/4-inch cubes
  • 1/4 cup fresh parsley, finely chopped
  • 1 cup shredded aged Gouda cheese
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 cup toasted walnuts, chopped

Method

Step 1: Prepare the Base
  1. Begin by preheating your oven to 350°F (175°C). While that’s heating up, grab a large mixing bowl. In it, whisk together the beaten eggs and half-and-half. Add the sea salt, black pepper, and Dijon mustard. The mustard adds depth to the flavors that follows.
Step 2: Cook the Aromatics
  1. In a medium skillet, melt the unsalted butter over medium heat. Toss in the diced onions and celery, sautéing them until they soften. This step will release incredible scents. After about 5 minutes, add the minced garlic, thyme, sage, and rosemary. Cook for another minute. The kitchen will smell fantastic.
Step 3: Combine Ingredients
  1. Once the veggies are fragrant, remove the skillet from the heat and pour the vegetable mixture into the egg mixture. Stir in the white wine vinegar. Then, add the bread cubes into the bowl and mix until everything is just combined. You don’t want to over mix; you still want some texture.
Step 4: Fold In the Good Stuff
  1. Now, it’s time to fold in the fresh parsley, aged Gouda, Parmesan, and toasted walnuts. Each ingredient adds its own character. The cheeses give it richness, and the nuts add a lovely crunch.
Step 5: Transfer and Bake
  1. Transfer the mixture to a greased baking dish. Spread it evenly to ensure even cooking. Pop it in the oven and bake for 45 minutes. You'll know it’s ready when the top turns golden brown and a toothpick inserted comes out clean.
Step 6: Cool and Serve
  1. Once out of the oven, let the bread pudding stuffing cool slightly before serving. This moment allows flavors to settle, making each bite better.

Notes

  • Choice of Bread: Use day-old bread for the best texture.
  • Cheese Variety: Feel free to mix cheeses based on your preference.
  • Make It Ahead: You can assemble it the night before and bake it fresh on the day of serving.
  • Adding Flavor: A splash of chicken broth can enhance the moistness.
  • Herbal Twist: Experiment with different herbs like oregano or basil for a unique flavor profile.
