Ingredients

Bread Pudding Ingredients:
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon salt
  • 4 cups whole milk, gently heated until steaming
  • 1 cup heavy cream
  • 10 slices of slightly stale bread, torn into chunks
  • 1/4 cup unsalted butter, melted
  • 1/2 cup golden raisins
  • 2 tablespoons orange zest
Whiskey Brandy Sauce:
  • 3 egg yolks
  • 1 cup superfine sugar
  • 1 teaspoon real vanilla extract
  • 1 1/2 cups warm milk
  • 1 tablespoon cornstarch
  • 1/4 cup cold water
  • 1 1/2 ounces brandy
  • 1 tablespoon unsalted butter

Method

Step 1: Prepare Your Ingredients
  1. Gather all your ingredients on the counter. It helps to have everything within reach. Preheat your oven to 350°F (175°C) to get things going.
Step 2: Mix the Custard Base
  1. In a large bowl, whisk together the eggs, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt. Slowly add the gently heated milk and heavy cream, stirring well to combine.
Step 3: Soak the Bread
  1. Add the torn bread chunks into the mixture, allowing them to soak up the custard. Then gently fold in the melted butter, raisins, and orange zest. You'll want the bread to absorb as much goodness as possible, ensuring creamy bites.
Step 4: Pour Into the Baking Dish
  1. Grease a 9x13-inch baking dish with butter or cooking spray. Carefully pour the soaked bread mixture into the prepared dish, making sure it’s evenly spread.
Step 5: Bake
  1. Place it in the preheated oven and bake for 40-45 minutes, or until the top is a beautiful golden color and the center is set. A toothpick inserted should come out clean, signaling you are ready for the next step.
Step 6: Prepare the Whiskey Brandy Sauce
  1. While the pudding bakes, let’s tackle the sauce. In a medium saucepan, whisk together the egg yolks and sugar until light and fluffy. Gradually whisk in the warm milk, cornstarch dissolved in cold water, and brandy.
Over medium heat, stirring constantly, cook until thickened. Once it’s ready, stir in the butter and vanilla for an extra kick.
Step 7: Serve
  1. Once the bread pudding finishes baking, allow it to cool for a few minutes. Slice it into squares and drizzle with the whiskey brandy sauce. You can serve it warm or at room temperature.

Notes

  • Here are some handy tips to elevate your bread pudding game:
  • Use Stale Bread: The staler, the better! It soaks up the custard wonderfully and gives you that perfect texture.
  • Don’t Rush the Soak: Letting the bread sit in the custard for a longer time ensures every bite is full of flavor.
  • Experiment with Flavors: Try adding chocolate chips, nuts, or different dried fruits for a unique twist.
  • Serve with Style: Plate your bread pudding with a scoop of ice cream or a dollop of whipped cream for a stunning presentation.
  • Garnish Thoughtfully: A sprinkle of fresh mint or a few orange slices can make your dish visually appealing.
