  • 1 large egg, lightly beaten

  • 2 garlic cloves, smashed into a paste
  • Sea salt and freshly cracked black pepper, to taste
  • 18 ounces lean ground chicken
  • 1/2 teaspoon smoked paprika
  • 1 small bunch fresh flat-leaf parsley, finely chopped

Step 1: Prepare Your Ingredients
  1. Start by gathering all your ingredients on the counter. This is a technique I always encourage. It not only makes cooking easier but also saves you from the frantic scramble when you forget something. Roll your sleeves up and get ready!
Step 2: Mix the Chicken Mixture
  1. In a large mixing bowl, combine ground chicken, finely minced onion, garlic paste, mayonnaise, beaten egg, flour, Dijon mustard, smoked paprika, and chopped parsley.
    As you mix, feel free to channel your inner chef.
    The mixture should be well-combined but not overworked, or you’ll end up with dense patties. A gentle touch goes a long way here.
Step 3: Season Generously
