Custard Rice Pudding

Custard Rice Pudding - Grandma's Tasty Recipes

Before diving into the heart of custard rice pudding, let’s chat about flavorful companions. This dessert shines when it meets various sidekicks. Fresh fruits like berries, bananas, or sliced peaches brighten the dish.
A sprinkle of toasted nuts adds crunch. Garnishing with a dollop of whipped cream makes it irresistible. Dark chocolate shavings or a drizzle of caramel can elevate it to gourmet status. Trust me, these simple additions transform a humble pudding into a memorable experience.

Ingredients

  • 2 large eggs
  • 1 cup of prepared jasmine rice
  • 3/4 cup of golden raisins
  • 2 cups of full-fat milk
  • 4 tablespoons granulated sugar
  • 1/8 teaspoon sea salt
  • 1 dash of pure vanilla extract
  • 1 pinch freshly grated nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon of maple syrup

Method

Step 1: Preparation of Rice
  1. First, cook your jasmine rice. You need one cup of cooked rice. If you’re using leftovers, that's perfect! Ensure it's at room temperature for the best results.
Step 2: Combining the Ingredients
  1. In a large bowl, combine the eggs, sugar, sea salt, vanilla extract, nutmeg, and cinnamon. Whisk these together until blended. The goal is a smooth mixture, so don’t rush. Take your time.
Step 3: Adding the Milk
  1. Next, gradually mix in the milk. Whisk continuously to avoid any egg curdling. The mixture should be creamy and inviting.
Step 4: Stir in Cooked Rice and Raisins
  1. Once smooth, add the prepared rice and golden raisins to the mixture. Stir gently. Make sure the rice and raisins are evenly distributed throughout.
Step 5: Cooking the Pudding
  1. Pour this combination into a medium-sized baking dish. Place your dish in a preheated oven at 350°F (175°C). Bake for about 40-50 minutes or until the top is golden and just set in the middle. It should jiggle a little, but not too much.
Step 6: Serve and Enjoy!
  1. Once it’s cooled slightly, serve warm or chilled. Top with any of your favorite garnishes. Your guests will be coming back for seconds!

Notes

  • Use Fresh Ingredients: Fresh eggs and good-quality milk make a noticeable difference.
  • Steer Clear of Overcooking: Monitor cooking time carefully, as overcooking can lead to a rubbery texture.
  • Experiment with Spices: While cinnamon and nutmeg are classics, you could also try cardamom or vanilla bean for a unique twist.
  • Chill Before Serving: If you love it cold, allow it to chill in the fridge for a couple of hours before you dig in.
  • Double the Recipe: This dessert is such a hit, and making extra is assuredly a good idea!
