Ingredients

  • 1 medium head of red and/or green cabbage
  • 1 small carrot grated, for a hint of sweetness and color
  • 1 tablespoon apple cider vinegar

Method

Step 1: Preparing the Cabbage
  1. First things first, grab your cabbage. Remove any outer leaves that may look wilted or damaged. Then rinse the head under cold water to clean it thoroughly. Once it’s clean, place it on a cutting board.
Step 2: Halving the Head
  1. With a sharp knife, slice the cabbage in half. Make sure you cut through the core, which you’ll want to remove. After halving, you can also cut each half into quarters if you prefer smaller pieces.
Step 3: Removing the Core
  1. The core is tough and not very tasty. Take your knife and angle it towards the center of the quartered cabbage. Cut out the core by making a triangular incision. You should have a clean piece of cabbage ready for shredding!
Step 4: Shredding the Cabbage
  1. Now comes the fun part! Place one of the cabbage quarters on the cutting board, cut side down. Using your knife, slice the cabbage into thin strips. Aim for about 1/8 to 1/4 inch in thickness. It’s okay if they aren’t perfect; homemade is all about character!
Step 5: Grating the Carrot
  1. While you have your grater handy, shred your carrot to complement the cabbage. This adds color and a sweet flavor that balances the cabbage's natural taste.
Step 6: Combining Ingredients
  1. Once you’ve shredded the cabbage and grated the carrot, toss them together in a large bowl. You should see a beautiful mix of colors!
Step 7: Dressing It Up
  1. Now, the fun part—add your dressing. A splash of apple cider vinegar is just the start. You can add olive oil, salt, and pepper to taste. Feel free to get creative by adding herbs or citrus for extra layers of flavor.
Step 8: Letting It Marinate
  1. If time allows, let your mixture sit for at least 10 minutes. This marination process helps the flavors meld together and softens the cabbage slightly.

Notes

  • Don’t Overdo It: When shredding, avoid cutting too thick. Thin strips will integrate better into your dishes.
  • Sharp Tools: Always use a sharp knife or a mandoline. Dull tools can make this process tougher and risk injury.
  • Batch It: Shred enough to last through the week! Store shredded cabbage in an airtight container in the fridge.
  • Color Matters: Red cabbage can give your dish a vibrant pop, not to mention added antioxidants!
Plate Smartly: Use in a big bowl or plate for easy mixing. A large bowl allows space for tossing and marination.
