  • 10 tablespoons of refined coconut oil, melted and cooled
  • cup finely ground almond meal
  • 1 tablespoon of espresso powder
  • 2 tablespoons of tapioca starch
  • ½ teaspoon of sea salt
  • 3 whole large eggs
  • 1 cup of organic coconut sugar
  • 2 tablespoons of coconut flour
  • cups of dark chocolate chunks, divided
  • 1 teaspoon of pure vanilla extract

Method
 

Step 1: Preheat Your Oven
  1. First things first, preheat your oven to 350°F (175°C). This ensures your brownies bake evenly. While the oven heats up, grease an 8x8-inch baking dish or line it with parchment paper for easy removal later.
Step 2: Mix the Wet Ingredients
  1. In a large mixing bowl, combine the melted coconut oil, coconut sugar, and eggs. Whisk them together until the mixture is smooth.
  2. The coconut oil might solidify a bit when mixed with cold sugar, but don't worry. Just whisk well. Add in the vanilla extract and mix it again.
Step 3: Combine Dry Ingredients
  1. In another bowl, whisk together the almond meal, coconut flour, tapioca starch, espresso powder, and sea salt. Mixing the dry ingredients separately helps to distribute everything evenly, ensuring that every brownie is perfectly delicious.
Step 4: Combine Wet and Dry Mixtures
