  • 2 tablespoons rich heavy cream
  • 1 tablespoon salted butter for a creamy touch
  • 8 oz. sweetened condensed milk, more if needed for desired sweetness
  • Pinch of fine sea salt
  • Dash of ground cinnamon to taste
  • Dash of ground nutmeg to taste
  • 1 tablespoon pure vanilla extract
  • 1 whole egg, lightly beaten
  • 1/2 cup golden or regular raisins soaked in bourbon or whiskey for added depth; optional
  • 1/2 cup bourbon or any smooth whiskey
  • New: 2 tablespoons golden syrup or maple syrup
  • Caramel-Pecan Sauce:
  • 1/2 cup unsalted butter
  • 1/2 cup packed dark brown sugar
  • 1/2 cup light corn syrup
  • 1/2 cup finely chopped pecans
  • 1 tablespoon bourbon or smooth whiskey
  • 1 teaspoon sea salt flakes

Method
 

Step 1: Prepare the Rice
  1. Start by rinsing your rice under cold water to remove excess starch. This helps achieve a better texture. In a medium saucepan, combine 1 cup of medium-grain white rice and 2 cups of water. Bring it to a boil, then reduce to a simmer, cover, and let it cook until tender, about 15 minutes.
Step 2: Combine Ingredients
  1. Once the rice is cooked, ensure it’s fully absorbed the water. Add in 2 cups of milk, 2 tablespoons of heavy cream, and 1 tablespoon of salted butter. Stir to combine.
Step 3: Sweeten It Up
  1. Mix in 8 oz. of sweetened condensed milk. Add a pinch of fine sea salt, a dash of cinnamon, and a dash of nutmeg. Stir gently to combine all those cozy flavors.
Step 4: Add the Rest
  1. In a separate bowl, lightly beat one egg. Gradually add a spoonful of the rice mixture to the egg, whisking continuously. This prevents the egg from scrambling when you add it to the hot mixture. Once combined, stir the egg mixture back into the pot.
Step 5: Soak the Raisins
