Step 4: Blend Until Creamy
- Continue blending the mixture until it becomes thick and creamy. This should take around 30 seconds. If your mayonnaise is too thick, you can add a spoonful of water to loosen it up. After making this several times, I learned that every batch can be a bit different based on the temperature of your kitchen. If it seems too thin, just keep blending!
Step 5: Taste and Adjust
- Now, it’s time for the taste test! If you feel like it needs more salt or acid, add a bit more lemon juice. This step is crucial for balancing flavors.
Step 6: Transfer and Store
- Once you’re satisfied with the flavor, transfer your Whole30 Coconut Oil Mayonnaise to an airtight container. It can last up to a week in the fridge. Believe me, it’ll be hard to resist finishing it before then!
